Saturday three weeks ago

I've run into a problem with the aritcles and time phrases:
1) The first time I was there we were there on a (the? or no arcitle?) Saturday three weeks ago for dinner; the food was very good and there was also a bellydance show.

2) In this past week many thins have happened in the world.
When is the beginning of "this past week"? Is it to count back seven days beginning from today?

3) I went to Taipei on Monday last week (or "last week Monday" or "Monday of last week"?).

No article is needed. You could say "...we were there on a Saturday" if you didn't want to specify which Saturday, but only wanted to explain why your friends might not see bellydancers when they go (maybe they onlly dance on Saturdays). But "...three weeks ago" tells us which Saturday you are talking about, so no article is needed.

Yes.

3) I went to Taipei on Monday last week (or "last week Monday" or "Monday of last week"?).

"On Monday of last week" is the most common way to say this. Actually, you could also say "last Monday," but this can lead to confusion about which Monday you mean. "Monday of last week" is clearer.
